Whipping up a delicious meal is something I really enjoy doing. I find it relaxing when I have the time to potter around the kitchen, chopping up veggies and mixing things together to create something yummy to eat.
I love feeding people, so when I do cook something, I make LOTS of it..!
Autumn is my favourite time of year.. mainly because it means I can get my biiiig soup pot out and make some beautiful soup. Best of all, it's so cheap to make too! How can you not love it?
I wanted to share this recipe with you.. it's one of our favourites and it's SO easy too.
I made it today for our lunch, and with plenty left over, we will keep it in the fridge for the week for easy meals when we're busy.
CAULIFLOWER SOUP - serves 6
1 tbs Olive Oil
1 large brown onion, chopped
2 garlic cloves, chopped
1 head cauliflower, cut into florets
500g potatoes, peeled and chopped
1 litre Chicken Stock (use Vegetable stock for vegetarian soup)
1/2 cup cream
1. Heat oil in a large sauspan over med-high heat. Add onion and garlic. Cook stirring for 3 minutes or until onion is softened. Add cauliflower and potato and cook, stirring, for 5 minutes.
2. Add stock. Season with Pepper and cover, bringing to the boil. Reduce heat to med-low. Simmer for 15 to 20 minutes or until potato is tender. Set aside to cool slightly.
3. Blend in batches until smooth. Return the soup to the pot over low heat. Slowly add cream while mixing. Cook stirring for 2 minutes or until heated through.
4. Serve with toast or bread rolls. I like garnishing my soup with fresh parsley from the garden and a sprinkling of pepper.
